Rib Roast with Blue Cheese Horseradish Sauce
A holiday roast makes a lovely presentation and is just about the best crowd-pleaser you can find. You want to order a little more than 1 pound per person of "bone-in standing rib roast." If you can, ask the butcher to cut the bone off of it and tie it back on for flavorful cooking but easy slicing. Ask for extra fat for the cap too, if it is available.
Yield: about 10 servings
Ingredients:
1 (about 14 to 16 pound) beef rib, roast ready
About 3-4 Tbsp of your favorite seasoning blend such as Greek Seasoning, or Creole Seasoning

Workforce issues were brought up during the recent Cline Shale Session held on Friday, December 14, 2012 at the Sweetwater campus of Texas State Technical College (TSTC).
The event was hosted by the Sweetwater Enterprise for Economic Development (SEED), in which SEED's executive director Ken Becker was the session host. Bill Lavers from the Development Corporation of Snyder (DCOS) was the session emcee.
The Mistletoe Brass Band recently played Christmas carols for students and teachers at East Ridge Elementary School.
Players are Billy Weems, trumpet; Dianna Adams, trumpet and arranger; Larry Ludlum, euphonium; Richard Smola, tenor saxophone; Dr. Jeremy Smola, trombone; Elias Chavez, tuba; Bill Tinsley, percussion; and Joe Rivera, manager.
This year's campaign for the Nolan County United Way (NCUW) is "Give Where You Live," so that the local organization can continue their commitment to local service. The 2012 goal has been set at $85,000, in which all funds raised will stay in the county to help nine local agencies.
Making up the agencies are the Boy Scouts, Girl Scouts, SNAP (Senior Nutrition Activities Program), Cancer Services Network, Gateway Family Services, Sweetwater BackPack Buddies, the West Texas Children's Advocacy Center (WTCAC), the Big Country Medical Reserve Corps, and the Women's Resource Center.

On Saturday evening, Dec. 22, a line of cars were parked on the 900 block of Silas Street to greet Santa and Mrs. Claus. The two, played by Ted and Peggy Kimbrell, gave out cupcakes and punch to children who came to visit their lighted home. Shown visiting Santa are Mitzi Kirby with her sons, James and Hayden. “This is our gift to the community and to God to celebrate Jesus’ birthday,” said Mrs. Kimbrell.
Christmas came early to the two bicycle drawing winners at Sweetwater Christian School. Kaegan Gomez and Mason Blueford were the winners of the Christmas drawing. The bicycles were donated by the Sweetwater Wal-Mart.
A local church youth group is offering middle school and high school students a new opportunity to ring in the New Year in a safe and fun setting.
The Salvage Yard is the sixth through twelfth grade student ministry at Emmanuel Fellowship Church in Sweetwater. The group will be sponsoring the "AllThingsNew - New Year's Eve Bash" on Monday, December 31 at the church, located at 1418 Hailey.
Doors to the event will open at 8 p.m. and there will be a $10 entry fee with food and drinks available. Each person will also be entered for chances to win door prizes, including $100 in cash.
"Isn't there anyone who knows what Christmas is all about?" asked a little block-headed boy in the 1965 classic carrying his namesake, A Charlie Brown Christmas, by Charles M. Schultz.
Ask anyone this question and you will probably get a different answer each time. But the timeless holiday movie shares what we hope Christmas to be, what it has become and what it really is about.
Sweetwater Intermediate School fifth grade students, Hailey Orozco, Bailey Sager and Samantha Bugarin were doing their part to help the Sweetwater community. They passed United Way buckets around the school collecting money for the charity. Not pictured is Bailey Sager.
