Peanut Butter Cup Pie

Heads up, chocolate lovers! This pie is the adult version of the candy that we all know and love so well.
For the crust:
24 peanut butter filled chocolate sandwich cookies
3 tablespoons melted butter
Directions:
Pulse together in the food processor until it is all crumbly and they all stick together to form a fine crust. Mold into a 10" pie and refrigerate until completely firm.
For the filling, blend together:
1 18 oz. jar of creamy peanut butter
1/2 cup heavy cream
1 8 oz. package of cream cheese
3/4 cup powdered sugar
1 teaspoon vanilla
Whip with a mixer until completely blended and fluffy. Pour in the pie shell. (Hint: use your microwave on the cream cheese and peanut butter to warm them up. It makes them easier to whip and the cream cheese won't lump.)
For the ganache top, bring to a boil:
1/2 cup cream
Pour over 6 oz. dark chocolate chips. Blend with a wire whisk until creamy and shiny. Pour on top of the pie to seal it. Use an off-set spatula if you need to smooth it out. Refrigerate for two hours. Serve.
